Quick and Easy Snack Bar (GF, DF, V)

Want something quick and easy to make for a healthy, balanced snack? A simple chuck-everything-in-one-bowl-and-mix method? Then I have the perfect recipe for you! The outcome is a fab, chewy, oaty, fruit and nutty bar for you to enjoy when you need a quick boost of energy.

Quick and Easy Snack Bar


Ingredients:
1/2 cup of almond butter
1/2 cup of oats
4 pitted medjool dates
1 cup of mixed fruit and nuts
1/4 cup dark chocolate chips
3/4 cup brown rice syrup
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp vanilla

50g dark chocolate


Method:
1. Preheat the oven to 180 degrees. Line a square baking tray.
2. Mix all the ingredients together. I used a food processor to mix the ingredients but if you don't have one don't worry, just chop up the nuts small and mix in with the other ingredients until you have a thick, sticky mixture.
3. Put the mixture into the lined tray, pressing down the mixture as much as you can, this will help it stick together and not break up easily.
4. Bake for 25 minutes until golden.
5. Leave to cool in the tray whilst melting the dark chocolate.
6. Take the tray bake out of the tray and put on a cooling rack then drizzle with the chocolate.
7. Cut into pieces!

I use cups in this recipe just as I find it an easier when baking something like this as you don't need to be 100% precise.
